This post carries on from my last article “Is a Balanced Gluten Free Diet Possible? Part 1”.

I have recently been greatly encouraged by the growing success of Stephanie Alexander’s Schools project where children of primary school age are introduced as part of their school curricula to the concepts of growing their own fresh fruit, vegetables and herbs and then being taught how to convert these into delicious, appetising and nutritious meals. The active involvement and excited looks on the faces of the kids involved are a joy to behold.

After successful pilot trials in Victoria this worthy program is now about to be extended nationwide with the support of the Federal Government. Over time, this splendid initiative can only develop important life skills and slowly begin to address the growing community health concerns about obesity, diabetes, coeliac disease and declining longevity.

Based upon current trends it is predicted that the prevalence of Diabetes in Australia will increase by 2020 to more than double the current level of 3.2 million affected Australians. Dr. Rodney Ford, a paediatrician and leading authority in the field of treating various forms of gluten sensitivity, predicts that within the next 10 years more than 30% of the population will be on a gluten free diet due to the increasing implication of gluten in a widening range of chronic human health issues. A projection which can only be regarded as a national shame and disaster.
